There’s nothing quite like a bit of comfort food on a cold Winter’s evening and what could be better than a day spent in your dressing gown with some freshly baked cookies and a warm cup of tea? Luckily we’ve got you covered with this delicious chocolate and yoghurt cookie recipe, which is sure to be a hit in curing those winter blues.
INGREDIENTS:
1 cup plain flour
1/4 tsp bicarb soda
1/8 tsp salt
4 tbsp unsalted butter
2/3 cup granulated sugar
1/3 cup light brown sugar
7 tbsp unsweetened cocoa powder
1/3 cup Village Dairy Natural Yoghurt
1 tsp vanilla extract
1/2 cup chocolate chips
METHOD:
Preheat the oven to 180C.
Mix together the flour, bicarb and salt in a large bowl.
In a saucepan, melt the butter, and then mix in both sugars and the cocoa.
Stir the butter mixture into the flour and then mix in yoghurt and vanilla extract.
Stir in the chocolate chips and the pecans.
Form the dough into walnut-sized pieces and drop onto a tray and squashing with your fingers until the desired shape and size.
Bake for 10 – 11 minutes until they just crack.
Cool for 5 minutes and sprinkle over some sea salt if for a sweet and salty taste
